Nestled just off the beaten path near a slightly industrial area of Waco, I discovered an unexpected gem, Cajun Craft. I was staying near Waco for a few days, but the area I was in had very limited choices for food. So, I looked up some nearby restaurants in Waco, and found Cajun Craft. It was worth the drive in from where I was staying. From the outside, it doesn't look like much: small parking lot, rusted roof, etc. However, I have found that often conceals some of the best places. An immediate friendly greeting was offered at the door and I was surprised by the quaint setting. There were only a few tables near the bar, but there was a covered patio attached and even more seating outside. The menu offered most of the traditional Cajun dishes at a modest price, but I already knew what I wanted. I ordered the Atchafalaya Catfish, a catfish filet over a bed of rice smothered in crawfish Étouffée. It was amazing. The Étouffée was rich and hearty, with the perfect spice level, maybe the best I have had west of Baton Rouge. The catfish was crisp and golden, giving a great balance to the creamy Étouffée. If you are ever in the Waco area and have a craving for some authentic Cajun cuisine, you must give Cajun Crafts a visit.

This used to be an old chicken shack and they really did a great job at turning it into something new for Waco. I’ve had the gator and the Korean fried wings. Their menu is excellent and you cannot miss! Everything is excellent and made to order. They even have great lunch specials, as well. They do not accept cash so just be prepared for that. You might be approached by a wanderer, in the parking lot, but that’s not the establishment’s fault. They have a clear sign that says no loitering or panhandling, as it is an issue, but not anything is going to keep me away! That’s the only reason I took off a star for atmosphere because they REALLY revamped that building. Food and service is amazing.

Everyone in our group enjoyed the plate they ordered. My husband said his Nashville hot chicken sandwich was the best he has ever had. My father in law loved his gumbo and jalapeño corn bread. I thoroughly enjoyed my fish tacos and the red beans and rice was so delicious. We also tried all 3 desserts( beignets, bread pudding and the chocolate bread pudding). All 3 were winners. My personal favorite is the orginal bread pudding. Be advised that the time to get the food is a little long after you order because they cook everything fresh, but the wait is worth it! The only thing I didn't like was the small and cramped seating area inside. Most of the chairs are bar heighth and some with no back support. It was too cold to eat outdoors where there were plenty of picnic tables. Maybe adding outdoor heaters would be a good idea. If I'm ever in Waco again, I'll be sure to stop again!

Dont let the outside look fool you, this place was great. I had the red beans and rice with andouille sausage, not 1 but 2 jalapeño cornbread muffins 🔥 The only reason I give it a 4 on the food is that I like my Cajun food to have some heat and the boudin balls, while very good flavor wise, there was no good spice or heat. Same with the read beans and rice, needed to add hot sauce. There was a gentleman, can't remember his name, but he was awesome to talk to! I seen him go to lots of different tables to interact or check on customers! It was date night for me and my wife, we had a great time on the outdoor patio! Great atmosphere, will definitely be back!

OM to the G!! I was in town for work and looked this place up. When I tell you it did not disappoint, delicious!! Everything I had was on point. Service was good and we sat outside, it was a vibe. I’ll definitely be back for sure!!
