Absolutely outstanding! The flavor of every dish I had was incredible, and the craftsmanship that went into the food was evident in every bite. You can tell the chef takes tremendous pride in creating a truly exceptional dish. Every ingredient was perfectly balanced, and the presentation matched the amazing taste. Overall, this was a 10 out of 10 experience. The food was simply phenomenal, and the chef is on another level when it comes to talent and creativity. If you’re looking for a memorable meal, I highly recommend this restaurant. I’ll definitely be back!

Last Sunday I went to the union hall for the first time the Huaco looked delicious so I decided to give it a try they did not disappoint. The beef torta and mango drink here are 10/10! Everything looked as good as it tasted. Chef Sebas provided excellent, fast service with a smile. Don't leave without trying the churro ice cream! Highly recommend

Huaco Eatery had already built a reputation before lunch began: hundreds of reviews, a 4.7 rating, and one dish appearing again and again in the conversation around the restaurant—pozole. That was enough reason to order it. The first surprise, however, was the pricing. Older online menus still showed the kind of wonderfully tidy numbers that immediately looked suspicious: $10 here, $4 there. Inside the restaurant, reality had moved on. The pozole was $15.99, chips and salsa $6.99, and the passion fruit agua fresca $5.99. A handwritten sign near the register announced that prices were going up another dollar. Then the food arrived, and the arithmetic became considerably less interesting. The chips were crisp, lightly seasoned with a chile-lime spice reminiscent of Tajín, and served alongside a salsa that looked and tasted like someone had actually made it rather than simply opened it. Cilantro, chile, queso fresco and texture were all visible. Even the shredded cabbage scattered among the chips added a cool, crisp counterpoint. The maracuyá agua fresca was almost theatrical. Passion fruit arrived bright and cold with lime, chile-dusted watermelon and tall tropical leaves rising dramatically from the cup. Sweetness and acidity played against each other beautifully, making it as useful between bites as it was photogenic. But the reason to come is the pozole verde. This was not a modest bowl of soup. It arrived as a fully composed meal: a generous green broth crowded with tender shredded chicken and plump hominy, then layered with avocado, cilantro, cabbage, pickled onion and other fresh garnishes. Watermelon on the side carried another hit of chile heat, turning something sweet and refreshing into part of the savory rhythm of the plate. Every spoonful could become something slightly different. Broth and hominy first. Chicken next. Creamy avocado. A little cilantro. A flash of acid. Something cool. Something spicy. That is where the $15.99 stopped looking expensive. The portion was enormous—large enough that, despite rarely taking restaurant food home, this one demanded a box. Leaving it behind would have been ridiculous. More importantly, it was exactly the kind of dish that should be excellent several hours later, after the flavors have had even more time together. Huaco’s online pricing may need an update. The pozole does not. This is the dish people keep mentioning for a reason.

Absolutely loved eating at Huaco Eatery in Union Hall! The chef is always so kind and friendly. I ordered the taquitos, and they were incredible. The green salsa, crumble cheese on top, and the super yummy beans and rice honestly reminded me of my suegra’s cooking so comforting. Definitely a spot I’ve kept coming back to!

Super friendly staff who really helped us with our decision. Fresh and hot food. It’s rare that the food that comes out looks just like the pictures advertising the food but it did. Taste was amazing. We had the trio appetizer, my wife had steak nachos, my daughter had chicken quesadilla, and I had a steak bowl. Excellent all around. Next time we’re in Waco we will definitely be back.
