Roberto’s Taco Shop - Waco, TX

Roberto’s makes a burrito with presence, but size alone cannot carry a meal. I ordered the Original Asada Burrito with guacamole and salsa fresca, along with the hot carrots and a Jamaica agua fresca. The burrito was generously packed with carne asada, but the meat arrived at room temperature and lacked the seasoning, char, and depth I expected. The guacamole and salsa added moisture, but sauce should complement the beef, not be responsible for giving the entire burrito its personality. I use salsa selectively because I want to taste the meat first. Here, I kept searching for the flavor—and the love—in the asada. I initially misunderstood “hot carrots” to mean temperature, but the heat refers to the jalapeño and spice. Even with that cleared up, the carrots were tough, refrigerator-cold, strongly vinegary, and off-putting to me. The Jamaica had the right ruby-red color but only a mild hibiscus flavor. It was refreshing enough, though far less vibrant than other versions I’ve had locally. At noon, only four customers occupied a dining room with space for roughly 30 to 40 people. A quiet room does not determine food quality, but on this visit it matched the subdued experience on the plate. The portions are substantial, and I finished the burrito, but “big” and “memorable” are not the same thing. With so many strong Mexican restaurants in Waco, I would not rush back based on this meal.

The carne asada fries consisted of a large quantity of French fries, estimated at approximately two pounds. The fries were not adequately seasoned. The dish included sour cream, guacamole, shredded cheese, and carne asada. The toppings did not sufficiently distribute flavor across the full volume of fries. The carne asada lacked noticeable seasoning and did not provide enough flavor to balance the dish. The rolled tacos consisted of beef inside corn tortillas that were rolled and deep-fried. They were topped with guacamole and shredded cheese. The structure, texture, and preparation were standard and consistent with typical expectations for this item. The overall food reflects a California-style format. Flavor intensity and seasoning levels were below typical regional expectations. Adjustments to seasoning and portion balance would improve the product.

If you know Roberto’s you know it’ll be good. As a California native, specifically from southern Cali I can say this was a little taste of home. Food was AMAZING. The service, AMAZING. I’m so glad I was able to come visit even if it was a bit of a drive from Austin.. so worth it! Can’t wait for the Temple location to open up. Definitely coming for another visit.

On 1 Aug 2026, I stopped by to Roberto's taco shop for breakfast. I ordered one chorizo, egg, potato taco, and one patotao and egg taco. Wow! The chorizo, potatoes and egg taco was the best I have tasted in a very, very, long time, and I am use to eating chorizo and eggs. It was so satisfying eating that taco, that I praised the flavor in every bite. The potato and egg taco was amazing also. Very impressed with the flavor of this authentic food, and I absolutely would recommend trying this place. No joke, the tacos are amazing and filling. Roberto's taco shop is located in Waco, Texas

The closest to home I've felt since moving here. The smell, the service, the food, everything was on point. I cant wait to visit again. We drove out from Austin to come here and we 1000% have zero regret about the trip. Thank you guys so much for bringing the taste of home to TX. The nicest people you'll ever meet, the best Mexican food you'll ever eat.
